A muscle section located in the leg of the cattle and is identified by a transparent layer to the mask that contains different cuts. Excellent for slow cooking, used mostly for Biff Bourguignon and ground meat that is low in fat. *It is possible to purchase the product also in 1-1.5 kg  for domestic use.
